Apparently, if you age wine in oak barrels that are stored in a cave, you get better wine. After the third or fourth taste, it all started to taste really good anyway. This was taken at the Toogood Winery in Fairplay, Calif. They have some interesting wine labels, with punny names like Fourplay, Cave Sirah, etc.
